Smoked Chicken Caesar salad

Some days you want to cook, enjoying the process of washing, chopping, sautéing, seasoning, and serving. Other days, you need a quick but impressive meal. This smoked chicken Caesar salad is perfect for those days. Easy to make, it looks and tastes like a culinary masterpiece. Originally invented at the Hotel Caesar in the USA, this salad is a breeze to throw together and works well with either smoked chicken or smoked duck.

Instructions

Prepare the Dressing:

  1. In a bowl, beat together the egg yolk, finely chopped garlic, lemon juice, mustard, ketchup, and chopped anchovies.
  2. Slowly drizzle in light olive oil while whisking continuously until the dressing thickens slightly and balances the acidity of the lemon juice.
  3. Season with plenty of black pepper.
  4. Add a little finely grated cheese, taste, adjust seasoning if needed, and stir in finely chopped parsley. The dressing’s flavor will change and soften over time if made in advance.

Assemble the Salad:

  1. Prepare croutons by tearing up good bread, seasoning with salt, pepper, and olive oil, and baking until golden.
  2. In a serving dish, layer the lettuce leaves, some shaved cheese, and croutons.
  3. Drizzle plenty of dressing over the salad.
  4. Adorn with sliced smoked chicken, more shavings of cheese, and anchovies.
  5. Top with a good dollop of dressing.

Optional Additions:

  • Add some croutons on top.
  • Sprinkle with chive, parsley, or marjoram from your herb bed.

Serve:

  • Best enjoyed with a well-chilled crisp and dry cider.
